Ingredients

  • Brie Cheese: 200 g rind trimmed and cut into 24 small cubes
  • Frozen Puff Pastry: 1 sheet approx 250 g thawed
  • Cranberry Sauce: 120 ml ½ cup whole berry or homemade
  • Fresh Rosemary: 1 tablespoon chopped
  • Chopped Pistachios: 2 tablespoons optional
  • Egg Wash: 1 egg beaten with 1 tablespoon water

Instructions

Preheat Oven:
Preheat oven to 200°C 400°F Line a large baking sheet with parchment paper
Prepare Pastry:
Unfold the puff pastry and cut into 24 equal squares
Shape Bases:
Place each square into the cup of a mini muffin tin gently pressing to form a base
Add Brie:
Add one cube of brie to each pastry cup
Add Cranberry Sauce:
Top each with 1 teaspoon cranberry sauce
Brush Pastry:
Brush exposed pastry edges lightly with egg wash
Bake:
Bake for 18 20 minutes until pastry is golden and cheese is bubbly
Cool and Remove:
Let cool 5 minutes then carefully remove from tin
Arrange and Garnish:
Arrange tartlets in a wreath shape on a serving platter Garnish with chopped rosemary and pistachios Serve warm
