- Frozen tater tots: 3 cups
- Eggs: 6 large
- Shredded cheddar cheese: 1 cup
- Diced bell pepper (any color): 1 cup
- Whole milk: 1/2 cup

- Preheat oven:
- Preheat oven to 400°F (200°C). Lightly grease a 9-inch ovenproof skillet or baking dish.
- Bake tater tots:
- Spread the frozen tater tots evenly in the bottom of the skillet. Bake for 15 minutes, until lightly golden.
- Mix egg mixture:
- Whisk together eggs, milk, salt, and pepper in a large bowl. Stir in diced bell pepper and half of the cheddar cheese.
- Combine:
- Remove skillet from oven. Pour egg mixture evenly over the tater tots. Sprinkle the remaining cheese on top.
- Bake frittata:
- Return the skillet to the oven and bake for 15–18 minutes, or until the eggs are set and the cheese is melted and bubbly.
- Cool and serve:
- Let cool for 5 minutes before slicing and serving.
