  • Diced bell pepper (any color): 1 cup
  • Whole milk: 1/2 cup

  • Black pepper (optional): 1/4 tsp

Instructions

Preheat oven:
Preheat oven to 400°F (200°C). Lightly grease a 9-inch ovenproof skillet or baking dish.
Bake tater tots:
Spread the frozen tater tots evenly in the bottom of the skillet. Bake for 15 minutes, until lightly golden.
Mix egg mixture:
Whisk together eggs, milk, salt, and pepper in a large bowl. Stir in diced bell pepper and half of the cheddar cheese.
Combine:
Remove skillet from oven. Pour egg mixture evenly over the tater tots. Sprinkle the remaining cheese on top.
Bake frittata:
Return the skillet to the oven and bake for 15–18 minutes, or until the eggs are set and the cheese is melted and bubbly.
Cool and serve:
Let cool for 5 minutes before slicing and serving.
