01 - 7 oz Pepper Jack cheese, cut into ½ inch cubes
→ Salsa
02 - 1 can (15 oz) black beans, drained and rinsed
03 - 1 medium ripe tomato, diced
04 - ½ small red onion, finely chopped
05 - 1 small jalapeño, seeded and minced
06 - ½ red bell pepper, diced
07 - 2 tbsp fresh cilantro, chopped
08 - Juice of 1 lime
09 - 2 tbsp extra-virgin olive oil
10 - ½ tsp ground cumin
11 - ½ tsp sea salt
12 - ¼ tsp freshly ground black pepper

13 - Tortilla chips or crackers, for serving (optional)
# Directions:
01 - Place the Pepper Jack cheese cubes on a serving platter, then cover and chill while preparing the salsa.
02 - In a medium bowl, mix black beans, diced tomato, finely chopped red onion, minced jalapeño, diced red bell pepper, and chopped cilantro.
03 - Whisk together lime juice, extra-virgin olive oil, ground cumin, sea salt, and freshly ground black pepper in a small bowl.
04 - Pour the dressing over the bean mixture and toss gently to combine. Serve the black bean salsa alongside or atop the cheese cubes immediately, optionally with tortilla chips or crackers.
