→ Optional Add-ons

10 - 1 avocado, sliced
11 - 4 tablespoons crumbled feta cheese

# Directions:

01 - Lay a tortilla flat on a clean work surface and spread 1 tablespoon of hummus evenly across the entire tortilla, leaving a small border around the edges.
02 - Layer the sliced red bell pepper, yellow bell pepper, carrot, cucumber, purple cabbage, and baby spinach in horizontal rows across the center of the tortilla to create a vibrant rainbow effect.
03 - Sprinkle the chopped fresh herbs, avocado slices, and crumbled feta cheese over the vegetable layers if using these optional ingredients.
04 - Fold the left and right sides of the tortilla inward toward the center, then roll tightly from the bottom upward to completely enclose the filling.
05 - Repeat the layering and rolling process with the remaining three tortillas and filling ingredients.
06 - Slice each completed wrap diagonally in half and wrap tightly in parchment paper or aluminum foil for transport and storage.

# Expert Advice:

01 -
  • Your kids actually get excited about vegetables when they can see every color in one bite.
  • It takes less time than waiting in a lunch line, and tastes infinitely better than anything from a cafeteria.
  • You can prep these the night before, and they stay perfectly fresh wrapped in foil or parchment.
02 -
  • The moment you add the hummus, your tortilla becomes flexible and forgiving, so don't skip it or use so little that the wrap becomes fragile.
  • Julienne or slice your vegetables as thin as possible the night before, because thin vegetables actually stay crisp in the wrap longer than thick chunks, and thinner pieces also make rolling easier.
03 -
  • Prep all your vegetables the night before and store them separately in containers so assembly in the morning becomes just stacking and rolling.
  • If you're making these for a crowd, lay out all your ingredients assembly-line style and let people build their own, which takes half the time and means everyone gets exactly what they want.
